Ingredients

  • 8 oz chicken breast, cut into cubes
  • 1/2 cup celery, sliced
  • 1/2 cup bell peppers, sliced
  • 1/2 cup green onions, diced
  • 1/2 cup tomato sauce
  • 1/2 konjac rice, (can be eaten once every 2 days in Phase 1)
  • 1 bunch parsley, chopped
  • 1 lemon, juiced
  • 1 tbsp olive oil
  • 1 clove garlic, sliced
  • 1/4 tsp oregano
  • 1/4 tsp paprika
  • 1/8 cayenne pepper
  • salt, to taste
  • pepper, to taste

Directions

  1. In a pan over medium heat, pour in olive oil.
  2. Add green onions, celery, bell peppers, oregano, paprika, garlic, cayenne pepper, salt, and pepper to the pan.
  3. Sauté for a few minutes.
  4. When vegetables are almost cooked, add tomato sauce, lemon juice, and chicken.
  5. Cover the pan with a lid and cook chicken.
  6. Remove lid and add konjac rice.
  7. Garnish with parsley.
  8. Serve. Bon Appétit!
