Ingredients
- 8 oz chicken breast, cut into cubes
- 1/2 cup celery, sliced
- 1/2 cup bell peppers, sliced
- 1/2 cup green onions, diced
- 1/2 cup tomato sauce
- 1/2 konjac rice, (can be eaten once every 2 days in Phase 1)
- 1 bunch parsley, chopped
- 1 lemon, juiced
- 1 tbsp olive oil
- 1 clove garlic, sliced
- 1/4 tsp oregano
- 1/4 tsp paprika
- 1/8 cayenne pepper
- salt, to taste
- pepper, to taste
Directions
- In a pan over medium heat, pour in olive oil.
- Add green onions, celery, bell peppers, oregano, paprika, garlic, cayenne pepper, salt, and pepper to the pan.
- Sauté for a few minutes.
- When vegetables are almost cooked, add tomato sauce, lemon juice, and chicken.
- Cover the pan with a lid and cook chicken.
- Remove lid and add konjac rice.
- Garnish with parsley.
