Happy Seafood Salad

The Happy Seafood Salad combines shrimp, scallops, crab meat, and seaweed. It is a nutritious taste from the sea!

Ingredients

  • 3/4 lbs shrimp, fresh, peeled, deveined
  • 3/4 lbs scallops
  • 1/2 lbs crab meat
  • 1/4 cup seaweed
  • 3/4 cup alfalfa sprouts
  • 2 cups endives
  • 3 cups spinach
  • 2 cups radicchio
  • 1 tsp chervil
  • 2 tsp Ideal Protein Oriental Sesame Sauce
  • 4 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1 tsp curry powder
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Mix cider vinegar and curry powder.
  2. Allow scallops to sit in mixture for 5 minutes.
  3. NOTE: If preferred, you may sauté Scallops 2 minutes in a pan instead of vinegar method.
  4. Arrange salad on plates.
  5. Prepare vinaigrette using curry, vinegar, chervil and dressing.
  6. Mix with olive oil.
  7. Salt and pepper.
  8. Coat shrimp and scallops with vinaigrette.
  9. Drizzle the rest on salad leaves.
  10. Top salad with seafood.
  11. Cut seaweed in fine strips.
  12. Quickly sauté in olive oil until crispy.
  13. Sprinkle over salad.
