Grilled Vegetable Platter with Turkey

Ingredients

  • 1 1/2 lbs turkey breast
  • 2 cups zucchini, sliced 1/2” thick
  • 4 cups green peppers, sliced 1/2” thick
  • 2 cups mushrooms
  • 1 cup Ideal Protein Balsamic Dressing
  • 2 tbsp olive oil
  • salt, to taste
  • ground pepper, to taste

Directions

  1. In large resealable plastic bag, combine all ingredients (except turkey and olive oil) and marinate in refrigerator for 30 minutes or overnight.
  2. Either thread vegetables onto skewers or place in grill basket and cook until tender.
  3. Season and brush the turkey breast with olive oil and grill.
  4. Slice the turkey, and arrange on the grilled vegetables.
  5. NOTE: This recipe is an excellent way to use turkey leftovers.
