Fish Medley Lasagna

Ingredients

  • 1 lbs halibut, cooked
  • 1/2 lbs cod
  • 1/2 lbs swordfish
  • 1 packet Ideal Protein Pancakes, prepared
  • 2 packets Ideal Protein Mushroom Soup, prepared
  • 4 cups spinach
  • 2 cups celery, chopped
  • 2 cups green onions, minced
  • 4 lemon wedges, to garish
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Preheat oven to 375 degrees.
  2. Slowly cook celery and green onions in 1 teaspoon of olive oil.
  3. Add spinach and reduce water (if needed).
  4. Add 1/4 of the mushroom soup.
  5. Set aside.
  6. Ensure Pancakes are approximately the size of the baking dish.
  7. Arrange a layer of pancakes, fish and vegetable preparation.
  8. Add another pancake and continue to layer.
  9. Proceed until dish is full.
  10. Top with the remaining mushroom soup.
  11. Bake until hot inside.
  12. Decorate with lemon wedges.
