Chicken Stuffed Peppers

Cut the top off of four green peppers and remove the seeds. Then, after cooking the chicken breast with the ingredients listed below, refill the green pepper and sink your teeth into this healthy meal.

Ingredients

  • 1 1/2 lbs chicken breast, cooked and shredded
  • 2 piece egg whites, whisked
  • 4 piece green peppers
  • 4 cups red pepper, chopped
  • 2 cups green onion, thinly sliced
  • 1 tbsp ginger, minced
  • 2 clove garlic, minced
  • 1 tbsp sesame oil
  • 1 1/2 tbsp soy sauce

Directions

  1. Cut the top off each whole pepper, remove seeds.
  2. Place peppers in boiling water and boil for 5 minutes.
  3. Drain and set aside.
  4. Heat pan and add sesame oil.
  5. Add garlic and ginger root.
  6. Mix for 30 seconds.
  7. Add chopped peppers and green onions and stir fry for an additional 2 minutes.
  8. Remove from heat.
  9. Add chicken and remaining ingredients.
  10. Combine well.
  11. Spoon 3/4 cup of this mixture into each reserved pepper.
  12. Surround the peppers with the rest of the stuffing.
  13. Cover and bake in a 350-degrees oven for 30 minutes or until thoroughly heated.
  14. NOTE: This dish is easy to prepare in advance and may be frozen.
