Chicken Kabob Skewers

This is a quick and easy meal! Turn the grill to medium-high heat and rotate your four chicken, zucchini and green pepper skewers for 3-4 minutes until cooked.

Ingredients

  • 1 1/2 lbs chicken breast, cubed
  • 2 cups green peppers, chopped
  • 2 cups zucchini, sliced 1/2” thick
  • 2 cups arugula
  • 2 cups green onions, sliced 1/8” thick
  • 2 tbsp Ideal Protein Honey & Dijon Dressing
  • 2 tbsp Ideal Protein Oriental Sesame Sauce
  • 2 tbsp olive oil
  • 4 skewers, prepared

Directions

  1. Preheat grill to medium-high heat.
  2. Thread chicken onto skewers alternating with peppers and zucchini.
  3. Brush with olive oil.
  4. Grill 3 to 4 minutes on each side turning frequently until chicken is cooked and vegetables are crispy and tender.
  5. Mix dressing and Oriental Sesame sauce until well blended.
  6. Add arugula and green onions.
  7. Mix well.
  8. Serve skewers on a bed of salad.
