Chicken in a Creamy Mustard Herb Sauce

This dish is made up of chicken and mushrooms and is served in a creamy mustard and herb sauce. One bite will have you hooked.

Ingredients

  • 1 1/2 lbs chicken breast, 4 pieces
  • 7 cups button mushrooms
  • 1 cup green onion, sliced thin
  • 1/3 cup chicken stock
  • 2/3 cup Ideal Protein Honey & Dijon Dressing
  • 1/2 cup dijon mustard
  • 2 tbsp olive oil
  • 2 clove garlic
  • 1 tbsp fine herbs, finely chopped
  • pinch sea salt and pepper

Directions

  1. Heat 1 tablespoon of olive oil in non-stick pan.
  2. Cook chicken for 10 minutes until browned on both sides.
  3. In same pan, add 1/2 cup green onions and cook for 1 minute.
  4. Add stock and bring to a boil.
  5. Slow cook for 4 minutes.
  6. Reduce liquid to 1 tablespoon.
  7. Mix dressing and mustard in a bowl.
  8. Slowly add the warm sauce from the pan on the bowl.
  9. Mix well.
  10. Return sauce to pan and let simmer (do not boil!) for an additional 5 minutes.
  11. Add herbs.
  12. Just before serving, warm 1/2 tablespoon of olive oil in a skillet.
  13. Add mushrooms, sauté until soft.
  14. Add remaining green onions and garlic.
  15. Cook for 2 minutes.
  16. Arrange mushrooms on the plate.
  17. Add a slice of chicken breast and top with sauce.
