Chicken in a Creamy Mustard Herb Sauce
Ingredients
- 1 1/2 lbs chicken breast, 4 pieces
- 7 cups button mushrooms
- 1 cup green onion, sliced thin
- 1/3 cup chicken stock
- 2/3 cup Ideal Protein Honey & Dijon Dressing
- 1/2 cup dijon mustard
- 2 tbsp olive oil
- 2 clove garlic
- 1 tbsp fine herbs, finely chopped
- pinch sea salt and pepper
Directions
- Heat 1 tablespoon of olive oil in non-stick pan.
- Cook chicken for 10 minutes until browned on both sides.
- In same pan, add 1/2 cup green onions and cook for 1 minute.
- Add stock and bring to a boil.
- Slow cook for 4 minutes.
- Reduce liquid to 1 tablespoon.
- Mix dressing and mustard in a bowl.
- Slowly add the warm sauce from the pan on the bowl.
- Mix well.
- Return sauce to pan and let simmer (do not boil!) for an additional 5 minutes.
- Add herbs.
- Just before serving, warm 1/2 tablespoon of olive oil in a skillet.
- Add mushrooms, sauté until soft.
- Add remaining green onions and garlic.
- Cook for 2 minutes.
- Arrange mushrooms on the plate.
- Add a slice of chicken breast and top with sauce.
