Chicken and Cauliflower Salad

Ingredients

  • 1 1/2 lbs chicken breast
  • 6 cups cauliflower, chopped
  • 4 cups mixed greens
  • 1 cup green peppers, cut 1″ thick
  • 1 cup green onions, sliced
  • 1 jalepeño pepper, chopped
  • 1/2 cup lemon juice
  • 1 clove garlic, crushed
  • 1/2 tbsp olive oil
  • 2 tbsp parsley, chopped
  • 2 tsp chili powder
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Brush chicken with olive oil and season with salt, pepper and chili powder.
  2. Cook in a 375 degree oven for approximately 30 mins or until cooked.
  3. Remove and let cool.
  4. Cut chicken into cubes.
  5. Blanch cauliflower in salted, boiling water.
  6. Combine chicken with cooked cauliflower.
  7. Add peppers, jalapeño, green onions and garlic.
  8. Refrigerate until ready to serve.
  9. Just before serving, add lemon juice, chili powder, parsley and olive oil, serve with greens.
