Chef Verati’s Christmas Log

Ingredients

Cake
  • 2 packets Ideal Protein Pancake Mix
  • 4 tbsp water
  • 4 egg whites
Vanilla Glaze and Chocolate Topping
  • 1 packet Ideal Protein Vanilla Pudding Mix
  • 1 packet Ideal Protein Dark Chocolate Pudding Mix

Directions

  1. Pre-heat oven to 350˚F
  2. In a bowl, whip egg whites until thick
  3. In another bowl, add 2 packets of Pancake Mix and 4 tablespoons of water.
  4. Mix all together
  5. Place parchment paper or plastic wrap onto a baking sheet and then pour your cake mix onto the sheet.
  6. Place tray in the oven for 8-10 minutes at 350˚F
  7. While the cake is baking, prepare the chocolate topping
  8. Add 1 packet of Dark Chocolate Pudding Mix to your IP shaker
  9. Add 100ml of water and shake until you get your desired consistency
  10. When cake is done, remove parchment paper or plastic wrap and flip it onto a sheet of plastic wrap
  11. Pour chocolate pudding mix on the top of the cake and spread out evenly
  12. Begin rolling the cake using the plastic wrap into a roll
  13. Place your roll in the freezer for 1 hour
  14. Remove the plastic wrap
  15. Add 1 packet of Vanilla Pudding Mix into IP shaker and add 100 ml of cold water and shake until you get your desired consistency
  16. Gently drizzle the vanilla glaze on roll and use fork to create swirl design as desired
  17. Cut cake on a diagonal into slices, place 2 pieces from each end on top of the log to complete the log design
