Ingredients
- 2 tsp olive oil
- 1 piece green onion
- 2 clove garlic, minced
- 8 oz ground beef
- 1 tsp salt
- 1 pinch ground pepper
- 2 can tomatoes, diced (14.5 ounces each)
- 3 tbsp apple cider vinegar
- 16 oz chicken broth
- 2 cups red cabbage, sliced into strips
Directions
- In large stock pot, heat oil and green onions and garlic until tender.
- Add ground beef to stock pot and season with salt and pepper. Cook until browned.
- Stir in can tomatoes, apple cider vinegar, and chicken broth. Bring to a simmer.
- Add the cabbage and stir in. Cover and cook on medium low for about 30 minutes or until cabbage has softened.
