Breaded Turkey Scallopini in Tomato and Basil Sauce

Ingredients

  • 1 3/4 lbs turkey breast, cutlets (4 pieces)
  • 2 egg whites
  • 2 packets Ideal Protein Southwest Cheese Curls
  • 6 cups asparagus
  • 2 cups celery, 1/2″ thick
  • 2 tbsp garlic, crushed
  • 2 tsp thyme
  • 8 tbsp crushed tomato
  • 1 1/2 tbsp dijon mustard
  • 3 tbsp olive oil
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Pre-heat oven to 375 degrees.
  2. Whisk egg whites.
  3. In a separate bowl combine mustard and curls for breading.
  4. Dip each piece of turkey into egg whites and then breading.
  5. In a hot pan, sauté until golden brown.
  6. Transfer cutlets to a baking dish and arrange side by side.
  7. Blanch celery root in salted, boiling water.
  8. Remove, set water aside.
  9. Cook asparagus in celery root water.
  10. Pour crushed tomato over meat.
  11. Add slices of celery root and asparagus.
  12. Add the remaining Tomato and Basil sauce.
  13. Sprinkle with thyme.
  14. Bake uncovered for 30 minutes.
