Braised Pork on a Bed of Cabbage and Zucchini

Ingredients
- 1 2/3 lbs pork chops
- 4 cups zucchini, cubed
- 4 cups red cabbage, shredded
- 1 cup lemon juice
- 2 1/2 tbsp fresh ginger, grated
- 8 tbsp Ideal Protein Italian Dressing
- 1 tbsp olive oil
- sea salt, to taste
- pepper, to taste
Directions
- Remove all fat from the pork.
- Slowly cook red cabbage in olive oil.
- Cover and add water if needed.
- After 30 minutes the cabbage should be tender.
- Sear the seasoned pork chops in olive oil on both sides.
- Add them to the cabbage.
- Keep covered and finish braising the pork.
- In the pork pan, sauté zucchini and ginger.
- When nice and tender, add half of the dressing and boil for 1 minute.
- Add lemon juice.
- Mix the remaining dressing with the red cabbage and juice from the zucchini.
- Plate cabbage and place pork chop on the side.
- Garnish with zucchini.
