Beef and Vegetable Chili

Ingredients

  • 1 1/4 lbs ground beef extra lean
  • 2 cups celery root, cubed
  • 2 cups cauliflower, blanched
  • 2 cups green peppers, cubed
  • 2 cups mushrooms
  • 2 tsp garlic, minced
  • 2 packets Ideal Protein Chili, prepared
  • 2 tsp olive oil
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 2 tsp sea salt
  • 1 tsp pepper

Directions

  1. In a pan, brown beef.
  2. Drain fat.
  3. Add chili powder, garlic and seasoning.
  4. Add chili sauce, celery root, green peppers and mushrooms.
  5. Transfer to a slow cooker.
  6. Cook on LOW for 8 hours.
  7. Blanch cauliflower in salted, boiling water and add to slow cooker for the last hour.
