Beef Skewers with Horseradish Sauce

Ingredients
- 1 1/3 lbs ground beef extra lean
- 1 packet Ideal Protein BBQ Crisps, crushed
- 6 cups celery root, 2″ thick
- 2 cups green onions, chopped fine
- 1 tbsp garlic, chopped fine
- 3 tbsp parsley, chopped fine
- 1/4 cup Ideal Protein Italian Dressing
- 3 tbsp horseradish
- 2 tbsp dijon mustard
- sea salt, to taste
- pepper, to taste
Directions
- In a bowl, mix half of the horseradish, parsley, garlic, green onions, mustard and ground beef.
- Add Ridges and season.
- Prepare mixture into four kebabs and refrigerate for 1 hour.
- Cook celery root in salted boiling water.
- Drain and add the other half of horseradish.
- Cook on stovetop for an additional 2 minutes.
- Puree celery root with dressing and seasoning until consistency is creamy.
- Place kebabs on skewers (or rosemary stems, or lemongrass stems) and grill on a very hot barbecue or pan.
- Serve on celery root purée.
