Beef Skewers with Horseradish Sauce

Ingredients

  • 1 1/3 lbs ground beef extra lean
  • 1 packet Ideal Protein BBQ Crisps, crushed
  • 6 cups celery root, 2″ thick
  • 2 cups green onions, chopped fine
  • 1 tbsp garlic, chopped fine
  • 3 tbsp parsley, chopped fine
  • 1/4 cup Ideal Protein Italian Dressing
  • 3 tbsp horseradish
  • 2 tbsp dijon mustard
  • sea salt, to taste
  • pepper, to taste

Directions

  1. In a bowl, mix half of the horseradish, parsley, garlic, green onions, mustard and ground beef.
  2. Add Ridges and season.
  3. Prepare mixture into four kebabs and refrigerate for 1 hour.
  4. Cook celery root in salted boiling water.
  5. Drain and add the other half of horseradish.
  6. Cook on stovetop for an additional 2 minutes.
  7. Puree celery root with dressing and seasoning until consistency is creamy.
  8. Place kebabs on skewers (or rosemary stems, or lemongrass stems) and grill on a very hot barbecue or pan.
  9. Serve on celery root purée.
