Beef and Bok Choy Stir-Fry

Ingredients
- 1 1/3 lbs flank steak, cut in 3″ thin strips
- 3 cups bok choy, chopped
- 2 cups bamboo shoots, canned sliced
- 1 cup green peppers, sliced
- 2 cups celery, chopped
- 3 tbsp green onions, finely chopped
- 4 tbsp fresh ginger, thinly sliced
- 3 cloves garlic, thinly sliced
- 3 tsp sesame oil
- 1 tbsp soy sauce
Directions
- Marinate sliced steak for 30 minutes in 1 teaspoon oil, 1 tablespoon soy sauce, and 1 tablespoon of ginger.
- Separate the leaves from the bock choy.
- Blanch in salted, boiling water.
- Cool and cut into 1.5” pieces.
- Brown garlic in 2 teaspoons of oil over medium heat.
- Remove beef from marinade and sauté until brown.
- Add bamboo, bok choy, celery, green onions and fry for a few minutes.
- Add marinade and boil until reduced.
