Beef and Bok Choy Stir-Fry

Ingredients

  • 1 1/3 lbs flank steak, cut in 3″ thin strips
  • 3 cups bok choy, chopped
  • 2 cups bamboo shoots, canned sliced
  • 1 cup green peppers, sliced
  • 2 cups celery, chopped
  • 3 tbsp green onions, finely chopped
  • 4 tbsp fresh ginger, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 3 tsp sesame oil
  • 1 tbsp soy sauce

Directions

  1. Marinate sliced steak for 30 minutes in 1 teaspoon oil, 1 tablespoon soy sauce, and 1 tablespoon of ginger.
  2. Separate the leaves from the bock choy.
  3. Blanch in salted, boiling water.
  4. Cool and cut into 1.5” pieces.
  5. Brown garlic in 2 teaspoons of oil over medium heat.
  6. Remove beef from marinade and sauté until brown.
  7. Add bamboo, bok choy, celery, green onions and fry for a few minutes.
  8. Add marinade and boil until reduced.
